CHICKEN CURRY RECIPE
Chicken curry is the most staple dish in any Indian house hold. This chicken curry is made from generations of Indian traditions. This is an authentic curry, made from the aromatic spices. This dish is simple to prepare and very delicious in taste. It would be good ac-compliment for Indian bread as well as rice.
NOTE : THIS CHICKEN CURRY RECIPE WILL SERVE FOR 4-6 PEOPLE
INGREDIENTS :
* 1 large onion, chopped
* 8 black peppercorns
* 4cm/11/2 inch ginger (peeled)
* 4 cloves garlic
* 10ml/2 tsps cumin seeds
* 15ml/3 tsps coriander seeds
* 4 cloves
* 6 small cardamoms
* 2 green chillies
* 1/4 cup oil
* 1/2 cup water
* 1 bay leaf
* 350g/12oz canned tomatoes (or)
30ml/2 tbsps tomato puree
* 2.5cm/1 inch cinnamon stick
* Salt
* 1 cup coriander leaves chopped
* 11/2Kg/3-4lb chicken, jointed
PREPARATION :
* Combine first nine ingredients in stainless steel jar and blend with 1/2 cup water to a very bay leaf and cinnamon for 1 minute
* Add blended paste and fry for 5 minutes on low heat.
* Add chicken and stir mix, cook for 3 minutes and then add crushed tomatoes.
* Season with salt, cover and let it cook for 3 minutes. Add little extra water if u need more gravy.
* Sprinkle with coriander leaves. Remove from heat when chicken is tender, and serve with bread or rice.
