      INGREDIENTS :

  • 500 grams butter

  • 2 egg yolks

  • 1 tablespoon water

  • Salt to taste

  • pepper as desired

  • 1 tablespoon freshly squeezed lemon juice

    PREPARATION :

    1. Arrange a double boiler (place a pan of water on the stove and then place another bowl on the top of it, to make a double boiler) and put the butter in it and leave it the butter melts.

    2. Carefully separate the yellow yolk from the white of the egg into a bowl. Remove any excess of the white with a spoon from the bowl.

    3. Combine the egg yolks and water, simultaneously beating it rapidly with a whisk. Place the pan in a larger basin of simmering water but beating constantly. Gradually add the egg yolk liquid, beating constantly while heating the liquid in the simmering water. Do not overheat the mixture as the eggs may scramble. Get it to the good sauce consistency and leave it or it may become a thick mayonnaise kind of consistency.

    4. Add salt and pepper along with some lemon juice. Season it according to your taste.
